Ingredients
- 8 small corn tortillas
- 3 tbsp olive oil
- 1 medium, diced yellow onion
- 3, minced garlic cloves
- 1, seeded and minced jalapeño
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 can (15 oz), drained and rinsed black beans
- 1 tsp chili powder
- 1 tsp ground cumin
- 1 tsp, divided kosher salt
- 1/2 tsp black pepper
- 4 large eggs
- 1/4 cup chopped fresh cilantro
- 1 ripe, sliced avocado
- 1/3 cup crumbled cotija or feta
- for serving lime wedges
Instructions
- 1Preheat the oven to 400°F and place a large (12-inch) oven-safe skillet over medium heat. Add olive oil, then fry the corn tortillas in batches for 1–2 minutes per side until lightly crisp and golden at the edges; transfer to a paper-towel-lined plate and sprinkle lightly with salt.
- 2In the same skillet, add the remaining olive oil. Sauté the diced onion for 4–5 minutes until translucent and starting to soften, stirring occasionally so it doesn’t brown too fast.
- 3Stir in the minced garlic and jalapeño and cook 60 seconds until fragrant. Add the fire-roasted tomatoes with their juices, black beans, chili powder, cumin, salt, and black pepper.
- 4Simmer the sauce uncovered for 6–8 minutes, stirring now and then, until it thickens slightly and the flavors meld; taste and adjust salt if needed. Nestle the crisped tortillas into the sauce, overlapping slightly so they soak up some liquid but stay partially crisp.
- 5Using the back of a spoon, make 4 shallow wells in the sauce. Crack one egg into each well. Season the egg whites lightly with the remaining salt.
- 6Transfer the skillet to the preheated oven and bake 8–11 minutes, until the egg whites are just set and the yolks are still jammy (or longer if you prefer firmer yolks).
- 7Remove from the oven carefully with an oven mitt. Scatter chopped cilantro and crumbled cotija over the top, then arrange avocado slices the eggs.
- 8Serve immediately straight from the skillet with lime wedges for squeezing. Scoop a tortilla, egg, and plenty of saucy beans onto each plate.
- 9If making ahead, prepare the sauce and tortillas the night before; reheat sauce, add eggs, and bake fresh in the morning for best texture.
