Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups whole milk
  • 1 cup plain Greek yogurt
  • 2 tbsp chia seeds
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 ripe bananas
  • 1 cup fresh strawberries
  • 1 tsp olive oil or neutral oil spray
  • 1/2 tsp ground cinnamon
  • 1/4 cup toasted coconut flakes
  • 1 pinch pinch of kosher salt

Instructions

  1. 1In a large bowl, stir together the oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla, cinnamon, and salt until everything is evenly coated.
  2. 2Divide the mixture among four jars or a shallow serving dish, cover, and refrigerate at least 6 hours or overnight so the oats soften and thicken.
  3. 3When ready to serve, preheat a grill or grill pan to medium-high heat, about 400°F.
  4. 4Peel the bananas and slice them in half lengthwise. Hull the strawberries if needed and leave them whole or halved.
  5. 5Lightly oil the cut sides of the bananas and the strawberries, then place them on the hot grill. Cook bananas 2 to 3 minutes per side and strawberries 1 to 2 minutes until distinct grill marks form and the fruit softens and caramelizes.
  6. 6Remove the grilled fruit and let it cool for a minute so it does not melt the cold oats. Slice the bananas into bite-size pieces.
  7. 7Spoon or uncover the chilled overnight oats and top generously with the warm grilled bananas and strawberries.
  8. 8Finish with a sprinkle of toasted coconut flakes and an extra drizzle of maple syrup if desired. Serve immediately so guests get the hot-cold contrast that makes this dish special.
