Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 3 tbsp sugar
  • 2 large eggs
  • 1 3/4 cups whole milk
  • 1/2 cup unsalted butter
  • 1 tsp vanilla extract

Instructions

  1. 1Preheat your Belgian waffle iron according to manufacturer instructions (usually medium-high heat).
  2. 2Melt the butter in a small saucepan or microwave and let it cool slightly.
  3. 3In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  4. 4In a separate medium bowl, beat the eggs until frothy, then whisk in the milk, cooled melted butter, and vanilla extract.
  5. 5Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined – a few small lumps are okay; do not overmix.
  6. 6Lightly grease the preheated waffle iron with nonstick spray or a little extra melted butter.
  7. 7Scoop about 1/2 to batter per waffle (adjust to your iron size) onto the center of the iron.
  8. 8Close the lid and cook for 4–6 minutes until deep golden brown and crisp on the outside.
  9. 9Carefully remove the waffle and keep warm in a 200 °F oven while you cook the remaining batter.
  10. 10Serve hot with softened butter, maple syrup, fresh berries, or powdered sugar.
