Ingredients

  • 4 large flour tortillas
  • 2 large red bell peppers
  • 2 large yellow bell peppers
  • 1 large orange bell pepper
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 cup plain hummus
  • 3 cups baby spinach
  • 1/2 English cucumber
  • 1/2 cup crumbled feta cheese
  • 1 tbsp fresh lemon juice
  • 1/4 cup chopped fresh parsley

Instructions

  1. 1Preheat a gas or charcoal grill to medium-high heat, about 425°F, and oil the grates lightly so the peppers do not stick. While the grill heats, rinse the bell peppers, pat them dry, and slice each into wide strips about 1 inch thick, discarding stems and seeds.
  2. 2In a large mixing bowl, toss the pepper strips with olive oil, smoked paprika, garlic powder, kosher salt, and black pepper until every piece is evenly coated and glossy.
  3. 3Place the seasoned pepper strips directly on the hot grill grates in a single layer. Grill for 4 to 5 minutes per side, turning once, until the skins are blistered in spots and the flesh is tender with light char marks.
  4. 4Transfer the grilled peppers to a plate and let them rest for 3 to 4 minutes so the juices settle. Meanwhile, warm the flour tortillas on the cooler edge of the grill for about 30 seconds per side until pliable and lightly toasted.
  5. 5Spread a generous layer of hummus down the center of each warm tortilla, leaving a border the edges so the filling does not squeeze out.
  6. 6Layer baby spinach over the hummus on each tortilla, then arrange the grilled pepper strips evenly on top.
  7. 7Thinly slice the cucumber into half-moons and scatter them over the peppers along with crumbled feta and chopped fresh parsley. Finish with a light squeeze of fresh lemon juice for brightness.
  8. 8Fold in the sides of each tortilla, then roll tightly from the bottom up into a secure wrap. Slice each wrap in half on a slight diagonal if desired.
  9. 9Serve immediately while the peppers are still warm, or wrap tightly in parchment for a portable lunch that holds well for several hours.
