
Grilled Vegetable & Grape Skewers

Ingredients
- 2 cups seedless green grapes
- 2 medium zucchini
- 2 red bell pepper
- 1 large red onion
- 1.5 cups cherry tomatoes
- 1/4 cup extra-virgin olive oil
- 3 tbsp fresh lemon juice
- 2 tbsp fresh oregano
- 3 garlic cloves
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 8 wooden or metal skewers
Instructions
- 1If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. Preheat a gas or charcoal grill to medium-high heat, about 400°F.
- 2Cut the zucchini into thick half-moons, the bell peppers into 1.5-inch chunks, and the red onion into wedges that will hold on skewers. Leave grapes and cherry tomatoes whole.
- 3In a large bowl whisk together the olive oil, lemon juice, minced garlic, chopped oregano, salt, and pepper to make a bright herb vinaigrette.
- 4Add all the cut vegetables, grapes, and tomatoes to the bowl and toss gently until everything is evenly coated. Let marinate for 10 minutes while the grill heats.
- 5Thread the ingredients onto skewers, alternating grapes, zucchini, pepper, onion, and tomatoes for colorful variety and even cooking.
- 6Place the skewers on the hot grill grates and cook for 3 to 4 minutes per side, turning carefully, until vegetables are tender-crisp with nice char marks and grapes are warmed and slightly blistered.
- 7Transfer the skewers to a platter and drizzle any remaining vinaigrette from the bowl over the top.
- 8Let rest for 2 minutes so the juices settle, then serve hot as a vibrant main with crusty bread or a simple green salad on the side.
