Ingredients

  • 2 cups seedless green grapes
  • 2 medium zucchini
  • 2 red bell pepper
  • 1 large red onion
  • 1.5 cups cherry tomatoes
  • 1/4 cup extra-virgin olive oil
  • 3 tbsp fresh lemon juice
  • 2 tbsp fresh oregano
  • 3 garlic cloves
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 8 wooden or metal skewers

Instructions

  1. 1If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. Preheat a gas or charcoal grill to medium-high heat, about 400°F.
  2. 2Cut the zucchini into thick half-moons, the bell peppers into 1.5-inch chunks, and the red onion into wedges that will hold on skewers. Leave grapes and cherry tomatoes whole.
  3. 3In a large bowl whisk together the olive oil, lemon juice, minced garlic, chopped oregano, salt, and pepper to make a bright herb vinaigrette.
  4. 4Add all the cut vegetables, grapes, and tomatoes to the bowl and toss gently until everything is evenly coated. Let marinate for 10 minutes while the grill heats.
  5. 5Thread the ingredients onto skewers, alternating grapes, zucchini, pepper, onion, and tomatoes for colorful variety and even cooking.
  6. 6Place the skewers on the hot grill grates and cook for 3 to 4 minutes per side, turning carefully, until vegetables are tender-crisp with nice char marks and grapes are warmed and slightly blistered.
  7. 7Transfer the skewers to a platter and drizzle any remaining vinaigrette from the bowl over the top.
  8. 8Let rest for 2 minutes so the juices settle, then serve hot as a vibrant main with crusty bread or a simple green salad on the side.
