Ingredients

  • 1 1/2 lb boneless skinless chicken thighs
  • 3 cups fresh corn kernels
  • 2 large ripe peaches, sliced into wedges
  • 3/4 cup heavy cream
  • 1/2 cup chicken broth
  • 1/3 cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 shallot, finely chopped
  • 3 cloves garlic, minced
  • 4 fresh thyme sprigs
  • 1 tsp smoked paprika
  • 1 1/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh chives, snipped
  • 1 tsp lemon zest

Instructions

  1. 1Season the chicken thighs on both sides with kosher salt, black pepper, and smoked paprika. Heat olive oil in a large 12-inch skillet over medium-high heat until shimmering.
  2. 2Add the chicken in a single layer and sear until deeply golden, about 5 minutes per side. Transfer to a plate; it will finish cooking in the sauce later.
  3. 3Lower heat to medium and melt the butter in the same skillet. Add the chopped shallot and cook until soft and translucent, about 2 minutes, then stir in the garlic for 30 seconds until fragrant.
  4. 4Add most of the fresh corn kernels, reserving a small handful for garnish. Cook, stirring, until the corn brightens and some kernels pick up light color, 3 to 4 minutes.
  5. 5Pour in the chicken broth and scrape the fond from the bottom of the pan. Nestle in the peach wedges and thyme sprigs and simmer gently for 2 minutes so the peaches soften slightly.
  6. 6Stir in the heavy cream and grated Parmesan. Bring to a gentle simmer (not a hard boil) and cook until the sauce thickens enough to coat a spoon, about 3 to 4 minutes. Season to taste with salt and pepper.
  7. 7Return the chicken and any juices to the skillet, nestling pieces into the creamed corn. Spoon sauce over the tops, cover partially, and cook over medium-low until the chicken reaches 165°F inside, 5 to 7 minutes.
  8. 8Discard thyme sprigs. Scatter the reserved raw corn, snipped chives, and lemon zest over the skillet for brightness and crunch. Serve family-style straight from the pan with crusty bread if you like.
