Ingredients

  • 3.5 lb whole chicken
  • 1 lemon
  • 4 fresh rosemary sprigs
  • 8 fresh sage leaves
  • 1 garlic head
  • 1.5 lb baby potatoes
  • 4 medium carrots
  • 1 large red onion
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp smoked paprika
  • 1.5 tsp sea salt
  • 3/4 tsp black pepper
  • 1 tbsp honey

Instructions

  1. 1Preheat the oven to 425°F and position a rack in the center so the chicken can catch even heat like Calcifer’s steady flame. Pat the whole chicken completely dry inside and out with paper towels; dry skin is the secret to crackling golden skin.
  2. 2Halve the lemon and stuff both halves into the cavity along with half the rosemary sprigs and a few sage leaves. Smash the garlic head open so the cloves stay in their skins but release aroma, then tuck a few cloves inside the bird as well.
  3. 3In a small bowl mash the softened butter with smoked paprika, salt, and the remaining chopped sage until it becomes a fragrant paste. Gently loosen the skin over the breast and thighs with your fingers and rub half the butter mixture underneath so it bastes the meat from within.
  4. 4Toss the baby potatoes, thick carrot chunks, and wedges of red onion on a large rimmed sheet pan with olive oil, the remaining salt and pepper, and the leftover rosemary. Nestle the chicken breast-side up in the center of the vegetables so everything roasts together.
  5. 5Brush the chicken skin all over with the remaining butter mixture, then drizzle the honey lightly over the breast for a gentle caramel glaze that will catch the fire. Roast uncovered for 60 to 70 minutes, rotating the pan halfway, until the skin is deep golden and a thermometer in the thickest thigh reads 165°F.
  6. 6If the vegetables look pale, give them a quick stir and return the pan for an extra 5 minutes while the chicken rests. The kitchen should smell of woodsmoke herbs and sweet roasted garlic.
  7. 7Transfer the chicken to a carving board and tent loosely with foil for 10 minutes so the juices settle. Squeeze the roasted lemon halves over the bird and vegetables for a bright finish.
  8. 8Carve the chicken into quarters or family-style pieces and arrange on a warm platter surrounded by the fire-kissed vegetables and soft garlic cloves. Spoon any pan juices over the top and serve while everything is still crackling hot.
