Ingredients

  • 3 medium crisp apples
  • 2 cups seedless green and red grapes
  • 1 1/2 cups old-fashioned rolled oats
  • 1/3 cup natural almond butter
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1 tsp fresh lemon zest
  • 1/3 cup chopped toasted almonds
  • 1/8 tsp pinch of salt

Instructions

  1. 1Wash and core the apples, then dice them into small bite-size pieces. Halve the grapes so their juices can mingle with the apples.
  2. 2In a large mixing bowl combine the diced apples, halved grapes, lemon zest, and a light sprinkle of cinnamon. Toss gently until the fruit is evenly coated and fragrant.
  3. 3In a separate bowl stir together the rolled oats, almond butter, maple syrup, remaining cinnamon, and salt. Mix until the oats look clumpy and hold together when pressed, forming a no-bake crisp topping.
  4. 4Spoon the fresh fruit mixture into a shallow 8-inch baking dish or into individual jars for easy meal-prep portions. Press the fruit down lightly so it sits in an even layer.
  5. 5Crumble the oat mixture evenly over the fruit, covering the surface without packing it too tightly. Sprinkle the chopped toasted almonds across the top for crunch.
  6. 6Cover the dish or jars and refrigerate for at least 1 hour so the oats soften slightly and the fruit juices begin to sweeten the topping.
  7. 7When ready to serve, scoop into bowls straight from the fridge. The topping stays pleasantly chewy while the fruit remains bright and crisp.
  8. 8For make-ahead gatherings, portion into small cups the night before; the flavors deepen overnight and travel well to potlucks.
  9. 9Garnish with an extra grape half or a dusting of cinnamon just before setting out so the crisp looks fresh and inviting.
