
Roasted Grape Oatmeal

Ingredients
- 3 cups fresh seedless red grapes
- 2 cups old-fashioned rolled oats
- 2 cups whole milk
- 2 cups water
- 3 tbsp pure maple syrup
- 1 tsp ground cinnamon

- 1 pinch pinch of kosher salt
- 1/3 cup chopped toasted walnuts
- 1 tsp unsalted butter
Instructions
- 1Preheat the oven to 400°F and line a small rimmed baking sheet with parchment for easy cleanup.
- 2Toss the whole grapes with the butter and a light drizzle of maple syrup so they roast evenly and caramelize.
- 3Spread the grapes in a single layer and roast for 12 to 15 minutes until skins wrinkle, juices bubble, and the fruit smells jammy and sweet.
- 4While the grapes roast, combine the oats, milk, water, cinnamon, and salt in a medium saucepan over medium heat.
- 5Bring the mixture to a gentle simmer, then reduce heat to low and cook for 5 to 7 minutes, stirring often, until the oats are creamy and most liquid is absorbed.
- 6Stir in the vanilla and remaining maple syrup, tasting so the porridge is lightly sweet but still lets the fruit shine.
- 7Remove the roasted grapes from the oven; they should look blistered and release deep purple syrup.
- 8Spoon the hot oatmeal into four bowls and top each generously with the warm roasted grapes and their pan juices.
- 9Scatter toasted walnuts over the top for crunch and a final tiny pinch of cinnamon if desired.
