
Peach Melba Waffles

Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder

- 2 large eggs
- 1 3/4 cups whole milk

- 3 medium ripe peaches, sliced
- 1 1/2 cups fresh raspberries
- 1/3 cup raspberry jam
- 2 tbsp water
- 1 cup vanilla Greek yogurt
- 1/4 cup sliced almonds, toasted
- 2 tbsp powdered sugar

Instructions
- 1Preheat your waffle iron to medium-high according to the manufacturer instructions until the ready light indicates it is hot. In a large bowl, whisk together the flour, baking powder, granulated sugar, and salt until evenly combined.
- 2In a separate medium bowl, beat the eggs lightly, then whisk in the milk, melted butter, and vanilla extract until the mixture looks smooth and slightly frothy.
- 3Pour the wet mixture into the dry ingredients and stir gently with a spatula just until no large dry streaks remain; a few small lumps are fine and help keep the waffles tender. Let the batter rest for 5 minutes while you prep the fruit.
- 4Warm a small saucepan over medium-low heat and add the raspberry jam with the water. Stir until the jam loosens into a glossy sauce, about 2 to 3 minutes, then remove from heat and fold in half of the fresh raspberries so they soften slightly.
- 5Lightly mist the hot waffle iron with nonstick spray. Scoop batter onto the center of the iron, close the lid, and cook until the waffles are deep golden and steam has mostly stopped escaping, typically 4 to 6 minutes depending on your iron.
- 6Transfer cooked waffles to a wire rack set over a baking sheet so they stay crisp; keep them warm in a 200°F oven while you finish the remaining batter.
- 7Just before serving, briefly warm the peach slices in a dry skillet over medium heat for 1 to 2 minutes until fragrant and lightly caramelized at the edges, or leave them raw if they are perfectly ripe and juicy.
- 8Stack two waffles on each plate. Spoon warm peach slices over the top, drizzle generously with the raspberry Melba sauce, and scatter the remaining fresh raspberries.
- 9Add a dollop of vanilla Greek yogurt, sprinkle with toasted almonds, and dust lightly with powdered sugar. Serve immediately while the waffles are still crisp and the fruit is juicy.
