Ingredients
- 2 cups old-fashioned rolled oats
- 2 cups whole milk
- 1 cup plain Greek yogurt
- 3 medium diced ripe peaches
- 3 tbsp brown sugar

- 1/2 cup chopped pecans
- 2 tbsp melted butter
- 2 tbsp honey
- 1 pinch pinch of salt
Instructions
- 1In a large mixing bowl, combine the rolled oats, whole milk, and Greek yogurt, stirring until every oat is coated and the mixture looks creamy. Add the brown sugar, vanilla extract, cinnamon, nutmeg, and salt, mixing thoroughly so the spices bloom into the liquid.
- 2Dice two of the ripe peaches into small pieces and fold them gently into the oat mixture so juicy pockets are distributed throughout. Spoon the mixture evenly into four jars or bowls, leaving a little headspace at the top.
- 3Cover each container tightly and refrigerate overnight, or at least 6 hours, until the oats have softened and thickened into a spoonable cobbler-like texture. The peaches will release their juices and sweeten the oats naturally.
- 4Just before serving, dice the remaining peach and set it aside for topping. In a small skillet over medium heat, toast the chopped pecans in the melted butter for 2 to 3 minutes until fragrant and lightly golden, stirring constantly so they do not burn.
- 5Drizzle the honey over the toasted pecans and toss quickly to coat them in a glossy glaze, then remove from heat. The mixture should smell like warm Southern peach cobbler topping.
