Ingredients

  • 2 slices thick-cut white or milk bread
  • 2 tbsp unsalted butter, softened
  • 3 tbsp honey
  • 1/4 tsp ground cinnamon
  • 1 fresh banana, sliced
  • 1/2 cup fresh raspberries
  • 2 tbsp toasted walnuts, roughly chopped
  • 1/2 cup whole milk yogurt
  • 1 pinch pinch of sea salt

Instructions

  1. 1Preheat the oven to 350°F and line a small baking sheet with parchment so cleanup stays simple.
  2. 2Butter both faces of each thick bread slice generously so the crumb will toast golden and fragrant.
  3. 3Place the slices on the baking sheet and bake for eight to ten minutes, flipping once halfway, until both sides are lightly crisp and the edges smell like a bakery window.
  4. 4While the toast warms, stir the honey with the cinnamon and a tiny pinch of sea salt in a small cup until the mixture is smooth and pourable.
  5. 5Remove the toast from the oven and let it rest one minute so the surface firms without steaming soft.
  6. 6Spread a spoonful of yogurt over each hot slice in a soft cloud, leaving a little border of golden crust.
  7. 7Arrange banana slices and raspberries over the yogurt so the colors look like a delivery basket of morning fruit.
  8. 8Drizzle the warm cinnamon honey generously over the fruit and bread so it soaks into the soft center.
  9. 9Scatter the chopped toasted walnuts on top for gentle crunch and a woodland finish.
