
Grape & Yogurt Parfaits

Ingredients
- 3 cups seedless red or black grapes, halved
- 3 cups plain Greek yogurt (whole-milk)
- 3 tbsp honey
- 1 tsp vanilla extract
- 1/2 cup toasted sliced almonds
- 1/2 cup old-fashioned rolled oats
- 2 tbsp fresh mint leaves, torn
- 1 tsp lemon zest
Instructions
- 1Rinse the grapes under cool water, pat them thoroughly dry, and halve them so their natural juices release lightly into the layers.
- 2In a medium bowl, stir the Greek yogurt with the honey and vanilla until smooth, creamy, and lightly sweetened; taste and adjust honey if the yogurt is very tart.
- 3Toast the sliced almonds in a dry skillet over medium heat for 3 to 4 minutes, shaking often, until fragrant and golden; transfer immediately to a plate to cool.
- 4In four clear glasses or jars, spoon a generous layer of the sweetened yogurt into the bottom of each.
- 5Add a layer of halved grapes, pressing them gently so some juice seeps into the yogurt below.
- 6Sprinkle a spoonful of rolled oats and a portion of the toasted almonds over the grapes for crunch and texture contrast.
- 7Repeat the layers once more—yogurt, grapes, oats, and almonds—finishing with a final scatter of grapes on top.
- 8Finish each parfait with lemon zest and a few torn mint leaves for a bright herbal lift that keeps the grapes tasting fresh.
- 9Chill the assembled parfaits 10 minutes if desired so the oats soften slightly, or serve immediately for maximum crunch.
