Ingredients

  • 3 cups seedless red or black grapes, halved
  • 3 cups plain Greek yogurt (whole-milk)
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 1/2 cup toasted sliced almonds
  • 1/2 cup old-fashioned rolled oats
  • 2 tbsp fresh mint leaves, torn
  • 1 tsp lemon zest

Instructions

  1. 1Rinse the grapes under cool water, pat them thoroughly dry, and halve them so their natural juices release lightly into the layers.
  2. 2In a medium bowl, stir the Greek yogurt with the honey and vanilla until smooth, creamy, and lightly sweetened; taste and adjust honey if the yogurt is very tart.
  3. 3Toast the sliced almonds in a dry skillet over medium heat for 3 to 4 minutes, shaking often, until fragrant and golden; transfer immediately to a plate to cool.
  4. 4In four clear glasses or jars, spoon a generous layer of the sweetened yogurt into the bottom of each.
  5. 5Add a layer of halved grapes, pressing them gently so some juice seeps into the yogurt below.
  6. 6Sprinkle a spoonful of rolled oats and a portion of the toasted almonds over the grapes for crunch and texture contrast.
  7. 7Repeat the layers once more—yogurt, grapes, oats, and almonds—finishing with a final scatter of grapes on top.
  8. 8Finish each parfait with lemon zest and a few torn mint leaves for a bright herbal lift that keeps the grapes tasting fresh.
  9. 9Chill the assembled parfaits 10 minutes if desired so the oats soften slightly, or serve immediately for maximum crunch.
